Piedmont Gravel Bike Tour: Day 3

“Colle delle Finestre” where Giro d’Italia become gravel

We are in the solitary and rugged Occitan Valleys,  today the climb take us to the Colle delle Finestre, the road made famous by many stages of the Giro d’Italia. It’s a challenging dirt climb where you will feel like pro cyclists (11 miles, 5500 feet).  Conquered the Pass, sweaty with glory, we will reach the lunch stop that is waiting for us in an alpine refuge.

The Giro d’Italia did this climb in 2005, 2011, 2015, and 2018. This dirt climb brought the Giro back to its heroic origins when all the roads in the Alps were not paved. At the end of the descent, we will pass by the imposing Fenestrelle military fort, one of the largest defensive structures in the Alps.

After the aperitivo in San Carlo Place, for dinner, we will go to the Ristorante Consorzion, our favorite restaurant in Turin (@SLOW FOOD and MICHELIN awarded). We will eat the classic ”Piemontese” cuisine revisited in a modern key. Excellent raw materials and really good cooking. To accompany it all a selection of wines from one of the most beautiful Italian and French natural wine lists.
Signature dishes: Steak tartar Piemontese-style – Risotto Bergese with bone marrow, brown stock
